As a response to the many challenges of the international development and needs of tourism and the hotel and restaurant industry, the objective of the Nestlé Pro Gastronomia Foundation is to promote advanced training and re-training of professors and trainers.

Basic training on hygiene – the simple and easy to understand guideline

Any establishment dealing with food (small or large hotel, restaurant, catering business, snack bar, etc) has the duty to respect the rules of cleanliness and food hygiene. The only way to meet with its responsibilities is to implement the right hygiene concept and ongoing training.

Definition of food hygiene

Food hygiene covers the observance of the proper measures during the processing, storing and distribution of food in order to ensure its safe and healthy consumption.

For this purpose, the following basic rules must be observed:
1. Attention to cleanliness
2. Separate raw food from cooked food and waste
3. Heath food sufficiently
4. Store food in safe temperature areas
5. Use clean water and perfect foodstuffs

Thanks to the collaboration of Belvoirpark hotel school Zürich, Gastrosuisse and food hygiene experts; we have been able to produce this film.

The DVD is in four languages (English, French, German and Spanish); its content is simple, easy to understand and without any complicated legal procedures.

It covers :
- microorganisms (bacteria, mould, virus, germs)
- contamination via foreign materials (cleansing and disinfectant agents, residues from lubricants, pesticides, etc)
- foreign objects (metal, glass, wood, plastic, bone fragments)
- influence of light and heat
- as well as work process and good conduct code from the delivery of goods up to the service to the customer.
